Caribbean Pork Roast

Caribbean Pork Roast Recipe

This Caribbean pork roast recipe is perfect for your next tropical themed dinner party or for entertaining on your boat. We use an oven in this recipe, but if you don’t have an oven on your boat, you can easily make it in a slow cooker. If you were at home, you could also use a Dutch Oven, but because it has to cook on the stovetop for at least three hours, I wouldn’t recommend doing that on a boat (at least a small boat like ours).

The Love of Caribbean Food

Since our honeymoon in Antigua back in 2003, Scott and I have visited the Caribbean annually.  We love everything about the islands, including their food. That’s why I make it as often as I do Italian food. One of my favorite Caribbean cookbooks is At Blanchard’s Table: A Trip to the Beach Cookbook.

Caribbean Pork Roast Cookbook

Their first book, A Trip to the Beach: Living on Island Time in the Caribbean was about how they opened a restaurant in Anguilla moving from the East Coast. I recommend both of them! Of course, if it’s about sailing and the Caribbean, I recommend a ton of books!

Back to the Pork Roast

This pork roast recipe can be used on a Pork Loin, Pork Tenderloin or Pork Shoulder Roast. It’s best to make the marinade the night before and let it marinate overnight.

I pair this recipe with my Grilled Sweet Potatoes and Caribbean Slaw for the perfect meal!

Instructions
  1. Mix all of the marinade ingredients in a large bowl.
    caribbean pork roast recipe
  2. Place pork roast in a large ziplock bag and pour marinade into the bag. Be sure to let all of the air out and seal it tightly. Place bag in bowl or casserole dish (in case it leaks) and refrigerate overnight.
  3. Pre-heat the oven to 425 degrees. Remove pork from marinade and wipe of some of the excess. Place the pork roast on a grill rack with the fat size up and roast for 20 minutes. Reduce heat to 325 degrees and cook for another 1.5 to 2 hours until tender. The roast will develop a "bark" on the outside as it cooks. Remove from oven and let sit for 15 minutes. Slice into 1" slices and serve immediately. (yes, I forgot to take a photo of the entire roast before we started eating!)

Caribbean Slaw

Caribbean Pork Roast

Caribbean Slaw Recipe

This Caribbean slaw recipe uses a Kale Beet salad blend from Mann’s.  You can keep it as simple as the blend or add some of your own favorite ingredients like jalapeno, radishes or jicama. In this recipe, I kept it simple. When you are out boating, you don’t typically have the space nor the time to prep a lot of meals in the galley. That’s why I love these pre-made salad blends when we stay on the boat.

Scott and I love the Caribbean Islands and we plan on retiring there some day. We fell in love with the culture during our honeymoon to Antigua in 2003. Since I love to cook and entertain, Caribbean cuisine is at the top of my list (along with Italian food).

Food Pairings

This slaw recipe goes with almost anything “Caribbean”. It would go great with jerk pork chops, grilled salmon and Caribbean pork roast. Because the slaw has honey in it, it tones down spicy dishes that you pair with it.  It’s also very flavorful and refreshing on a hot summer day! Enjoy.

Grilled Jerk Pork Chops with Sweet Potatoes

jamaican caribbean bbq

Authentic Jerk Sauce from the Caribbean

There are many recipes out there for jerk sauces and I have tried many of them. Since Scott and I travel to the Caribbean every year, I know the flavor I am wanting and none of the recipes I ever tried mimicked what we had in the Caribbean.

Finally, we met a cook in Jamaica that gave me his secret recipe, which is very rare.  I’ve made some slight changes to it (for example, I don’t use cinnamon sticks in my blender) to finally get the flavor I want.   It’s the real deal and awesome!

I love to pair this recipe with many of my Caribbean recipes such as my Caribbean Slaw and Black Bean Salad.

  1. Pour the jerk sauce into a zip lock bag and marinate the pork chops for up to 24 hours. Pre-Heat Grill to med-high. Remove the pork chops from marinade and bring to room temperature for about 20 minutes before grilling. Meanwhile, peel the sweet potatoes and slice into 1" slices. Place potatoes in cool water and bring to a boil. Boil for about 10 minutes until they are slightly tender, but not falling apart. Strain potatoes and brush them with olive oil. Sprinkle Emeril's Essence spice and kosher salt on all sides. Grill pork chops on medium high for about 10 minutes or until internal temperature is 135º. Grill sweet potatoes for about 3 minutes are on each side. Serve immediately.

Mango & Red Bell Pepper Salsa

caribbean salsa grilling

Mango salsa

This fresh salsa goes great with so many items, especially spicy food. I use it on grilled salmon, shrimp on a skewer,  jerk chicken and spicy pork tenderloin. Be sure to find a mango that is not too ripe, as it will become mushy. You can prepare this salsa a few hours before serving.
